Pinto Beans & Beef Sausage

Ingredients

2 cups of dry pinto beans

1 can of green chilies

1 onion chopped finely

2 packages of Beef Sausage Sliced

1 can of chicken broth

1 Green Bell Pepper Chopped

Directions

Soak overnight 2 cups of pinto beans with salt to taste. Once the beans are ready to cook, boil until tender and drain excess water. In a large saucepan combine onion, chillies, bell pepper on medium heat. Add seasoning to taste of salt, pepper, garlic, etc… Add in Beef sausage and cook until brown. Add chicken broth and pinto beans and simmer until the sauce has thickened. Remove from heat for 5 minutes before serving.

Serve over rice or in a bowl with corn chips.
